Amazeballs

As I mentioned before…it’s been a lowkey week.

But one exciting thing has happened.

I made Fitnessista’s amazeballs for the first time. And I’m pretty sure I uttered a profanity when I took a bite, they were so good.

I went pretty much by the same recipe, just used some of the substitutes that she mentioned.

In the mix:

2 tbsp Sunwarrior vanilla protien powder

2 tbsp unsweetened shredded coconut

2 tbsp almond butter

1 tbsp honey

1 dried fig

Pinch salt

Dash of cinnamon

Mix together and form into balls.

I added up the calories of my version and they came out to 100 calories per ball…not bad!

These only make 4 balls, so double or triple the recipe if you want more 🙂 I was too lazy to pull out the food processor so I actually mixed everything with my hands in a small bowl. Probably would have been a bit easier to do in the food processor, but this worked fine too if you’re lazy like me 🙂 I also keep mine in the fridge.

Bummer Town

Hello friends! Hope everyone is surviving the first day “back to the grind”. It was a bit tough for me!

This morning I saw a TV commercial for the Alzheimer’s Association’s Walk to End Alzheimer’s walk that’s going to be September 24. Without getting too much into details, my dad passed away last year from dementia. It was a terrible time and I’m still struggling with his death, but I’ve been waiting for a walk/run to come along that I could get involved with. I’ve always loved fundraising and volunteering, and I feel like doing something like this may help me make peace with myself. And I’d love the opportunity to help change the future for other families.

So I started my own team, Walk for Love. I’m excited to be a part of an event that means so much to me. Needless to say, all the thinking about my dad today landed me in bummer town. I wasn’t in the best of moods when I got home. I decided to slip on my sneaks and get some energy out on the treadmill. I did the cardio parts of The Fitnessista’s September Schweaty Workout. Whew! It was schweaty indeed…

Ya, I average about 2 miles each half hour…don’t judge me…I never said I was a runner 😉 Although I have done a 10 minute mile…it just takes a lot to kick my own butt.

I felt a bit better. Then it was dinner time.

I forgot to mention that yesterday’s chicken piccata was from a whole chicken that The Chef broke down. And boy, does it make a difference than buying regular ol’ chicken breasts! The meat was SO tender. Tonight The Chef wanted to cook off the thighs. We also had some red quinoa to use up. No veggies except spinach. There was also left over peanut sauce from my birthday (it was still good!). Everything ended up getting mixed in together.

That on top? Ya, that would be crispy chicken skin. I thought this meal would be semi healthy from the quinoa, but not so much 🙂
