Breakfast

A delicious breakfast creation by Jon. He’s been really into slow scrambled eggs lately. These eggs were atop toasted baguette, avocado and tomato coulis.

I’ve been on an avocado toast kick lately. This was mashed avocado, lox and goat cheese. Hard boiled egg on the side for extra protein.

More avocado toast! Thin layer of onion and chive cream cheese, sliced avocado and lox.

A simple favorite. Toast with peanut butter and banana.

Sometimes yummy eats are not pretty eats! Twice baked potato topped with turkey chili. Yum!

After an indulgent day the next day I like to balance out with a colorful salad. Spinach, cucumber, radish, artichokes, hearts of palm and sundried tomatoes.

This was a meal I whipped together when I thought “there was nothing to eat”. Tomato soup and half a grilled cheese with horseradish cheddar and turkey bacon.

Sandwiches from Pom Pom’s! Jon and I like to split. This was there tuna melt and the turkey with bacon.

We tried Roux for brunch just yesterday and it was delicious! Love their bloody mary’s and this jambalaya was full of flavor and cajun spice.

And this is what we call leftovers in our house. Pork tenderloin topped with mango pineapple salsa, wild rice with kale and steamed green beans.

This was a new pinterest recipe I tried and it was one of the best quinoa casseroles I’ve had to date! Chicken Chili Quinoa Casserole with chicken, black beans, corn and kale.

I had been craving a huge cobb salad for awhile and finally made one. And it was everything I had dreamed of. Roasted chicken, hard boiled eggs, avocado, radish, cucumber, tomato, turkey bacon and creamy ranch dressing.

Before a yoga workshop I wanted a light dinner and sushi from Fresh Market fit the bill!

Pumpkin Spice and Everything Nice

I have a confession…

While enjoying a cocktail last week at our new favorite bar, Jon and I got to talking to a small bachelor party (they were quite entertaining). We had some good banter going on and in reference to a drink he was drinking one of them asked me, “Do you like pumpkin spice lattes?” In response I leaned in and said “Are you calling me a basic bitch?” Laughter ensued.

My confession? You guys…I most definitely am…a basic bitch. Because yes, I do like pumpkin spice lattes. I love pumpkin spice EVERYTHING. Give me ALL THE THINGS pumpkin spice. Yes, I am one of THOSE people.

My excuse? I live in Florida. And I grew up in Connecticutt…so I know what REAL Fall feels like, looks like and tastes like. I miss the changing leaves, the brisk cool air…so if a little pumpkin spice brings me a little Fall happiness then so be it!

I will admit…some of the pumpkin spice things have gotten a wee bit out of hand, but there’s a lot of yummy pumpkin spice items out there. I’ve tried my fair amount and here are some of my favs!

Tazo Chai Pumpkin Spice Latte

I love the spicy notes of chai so chai mixed with pumpkin spice is heaven in a cup to me. A little bit spicy and a little bit sweet.

Trader Joe’s Pumpkin Waffles

Trader Joe’s has done me right in the pumpkin everything department. These pumpkin waffles are SO good and they’re actually the best frozen waffle I have ever had. The flavor is perfect and they are perfectly soft and fluffy.

Trader Joe’s Honey Roasted Pumpkin Ravioli

This was definitely an impulse buy since once I got home I wasn’t sure how to prepare them.

I ended up getting some chicken sausage and after sautéing it I added alfredo sauce and tossed the cooked ravioli in it. Served with roasted asparagus.

Next time I think I’d try doing a lighter sauce, like a butter sage sauce. The pumpkin and the alfredo was a bit too much together.

The Fresh Market Pumpkin Spice and Everything Nice Gelato

Love this gelato from The Fresh Market. Has a TON of pumpkin flavor and is smooth and creamy. Makes a perfect light dessert.

My Favorite Places For Healthy On The Go Meals

One of the major changes I needed to adjust to with my new job was my eating schedule. I’m either at home or I’m out and about going to meetings, events, visiting with coworkers, etc. I’ll often find myself out around lunch time and the inevitable question presents itself…where should I go get lunch?

Thankfully, I’m highly turned off by fast food (i.e. MacDonald’s, Taco Bell, Burger King). Also, thankfully, I’ve found that there are many places where it is easy to stop in and grab a healthy meal.

Here are some of my favorite places to go and grab a quick, healthy meal. Convenient doesn’t have to be bad for you!

Panera

This one is probably the post obvious, but who doesn’t love Panera? With an array of soups, sandwiches and salads your taste buds can never get bored. I also love how they list their calories on their menu. I’m a big fan of the You Pick Two and my new fav combo is the Roasted Turkey Avocado Sandwich and the Strawberry Poppyseed Chicken Salad. I highly recommend getting their rewards card for freebies and discounts!

Little Greek

Even though this place is a chain it’s my favorite Greek place in St. Pete (there’s not a lot of options). I haven’t even had their gyro because every time I go I can’t help but get their Greek salad. Their grilled chicken is amazing! It has that grilled taste and really makes the salad.

Chipotle/Tijuana Flats

I’m a burrito bowl lover and both of these locations offer an awesome, fresh tasting burrito bowl (in Tijuana Flat’s case it’s the Noritto Bowl). Rice, beans, meat and salsa. Can’t go wrong with that.

Rollboto

This is a local eatery that serves up sushi at a fast pace. Think of Subway but with sushi. You can choose from one of their signature rolls or create your own. You can even substitute brown rice! They also have lots of healthy side options such as miso soup, seaweed salad and cucumber salad.

Publix/Whole Foods/Fresh Market/Rollin’ Oats

I love Publix for when I want a freshly made wrap. It’s also easy to grab healthy snacks like fruit bowls, veggies, etc. Whole Foods has an awesome (albeit costly) salad bar and I love that I can grab a pre made juice/smoothie. Fresh Market also has freshly made sandwiches, salads, sides and sushi already ready to grab and go. Rollin’ Oats is one of my favorite grocery stores in St. Pete. They also have a grab and go area with freshly made sandwiches and salads. Or you can order off their menu at their café. I also love getting a fresh juice or smoothie here as well.
