Salmon Salad BLT Wrap

I don’t know about you, but my lunches usually rotate between a sandwich, salad or snack plate. It can get old quickly. But every now and then I love to think out of the lunch box (har har) and get creative. With a pouch of salmon and condiments in the fridge I came up with one of my new favorite lunches: the Salmon Salad BLT Wrap.

This is an incredibly easy and quick lunch to put together. Just mix up the salmon salad, lay out your wrap, layer with salmon salad, bacon and spinach, wrap it up and eat up!

I love to keep salmon pouches on hand for salads. (In fact you can use this recipe for a salad instead of a wrap!) For this, I used Chicken of the Sea brand, but you can use any of your favorites from your local grocery store. Even a fun, flavored one!

The beauty of this recipe too is that you can make it your own! Instead of mayo, you can use greek yogurt for a lower fat content. You can add any of your favorite spices. You can use turkey bacon instead of regular bacon. Kale instead of spinach. Be creative and use what you have on hand!

Salmon Salad BLT Wrap
Serves 1
A super easy and healthy spin on the classic BLT.
Write a review
  1. 1 whole wheat wrap
  2. 5 oz Chicken of the Sea salmon pouch
  3. 1/2 cup spinach
  4. 2 strips bacon, cooked
  5. 1/4 cup sundried tomatoes
  6. 2 tbsp. mayonnaise
  7. 1 tsp. garlic powder
  8. 1 tsp. onion powder
  9. 1 tbsp. Herbs de Provence
  10. Salt and pepper
  1. Cook bacon according to package instructions. Set aside.
  2. In a small bowl add salmon, sundried tomatoes, mayonnaise, garlic and onion powder, Herbs de Provence and salt and pepper. Stir to combine.
  3. Crumble bacon and add to mixture. Stir to combine.
  4. Place spinach in middle of wrap. Spoon mixture on top of spinach.
  5. Fold sides of wrap first, then fold bottom portion and roll forward. Enjoy!

Recent Eats 4/28/15 Vegas Edition

One of my favorite lunches is a nice, big snack plate. This day it was Boar’s Head black peppermill turkey, Boar’s Head muenster cheese, a gala apple and Cape Coad chips.


I was away at our company’s annual conference this past week…in Vegas! The food there was a-mazing. This was my first meal in Vegas after a 5 hour flight (ugh!). A smoked salmon sandwich with an iced latte at Bellagio’s Jean Philippe Patisserie.


A nice yummy lunch once I got back home. Jon had made some of the best chicken salad. I made a salad out of it and added some leftover bacon. Best think about putting things like chicken salad on top of greens? No need for dressing!



One of my favorite healthy dishes I made before I left for Vegas. Spaghetti squash with meatballs, kale and marinara sauce.


First dinner in Vegas at Bellagio’s Noodles. Duck and pork combo with rice and Chinese broccoli.


12 oz NY Strip steak at Bellagio’s FIX. This was one of the best steak’s I have ever had. Our table also shared a bunch of sides that were equally amazing.


I didn’t get a ton of food pics while at the conference, but I have to say Bellagio’s catering rivals any convention food I’ve ever had. Our breakfasts and lunches were delicious and healthy. Our gala dinner was quite impressive too. This was just the appetizer of our gala…such pretty plating!



As nice as it is to get away for a few days it’s always nice coming home. I was especially yearning for a home cooked meal. I made myself pan seared chicken with sautéed spinach and mushrooms on top of mashed potatoes. As a time saver for mashed potatoes I like to use Pineland Farms all natural mashed potatoes.

Have you ever heard of potica? If not you’re missing out. It’s a Slovenian pastry/bread that’s a holiday tradition in Jon’s family. His dad surprised us on Easter by bringing us Easter leftovers, including some potica!


Last weekend I had a friend’s wedding to attend. I knew the night would be filled with food and drink so I wanted to start the day off healthy with one of my fav smoothies: 1 banana, 1 cup almond milk, 1 tbsp. almond butter.


One of my standard breakfasts…eggs, turkey sausage, avocado and yes ketchup. Does anyone else put ketchup on their eggs? I always have and love it, but Jon things it’s gross, ha!


I haven’t had much appetite in the morning lately so my breakfasts have been light. This one morning toast with Peanut Butter and Company’s Cinnamon Raisin sounded good to pair with my morning latte.


We’ve gotten into the habit of making our own oatmeal, but I’ve been craving instant oatmeal so I picked up a box. I like the texture better…I can never get my homemade version that smooth!



You can never go wrong with a hearty sandwich! And there’s avocado hiding under those tomatoes.


This was the same day as the wedding I attended. I wanted a healthy but filling lunch and didn’t have anything in the house…so Publix turkey sub it is! And those chips are one of my fav chip brands: Cape Cod. A new sweet chili flavor that was awesome!




Salad and soup is a favorite lunch of mine. Salad included chicken, spinach, beets and new goat cheese crumbles I found at Publix. I love love love Pacific brand soup. Their flavors are tasty and natural!



This was a Jon dish. Roasted chicken, roasted potatoes and roasted green beans. So simple, but oh so good.


Another yummy Jon dish! Chicken Parmesan with pesto angel hair and salad. The pesto was a gift from his sister who got it in Spain…SO good.


My friend Lora and I had a dinner date where we picked up food from Fresh Kitchen in Tampa. If you haven’t tried them yet you must! Their food is delicious and everything is healthy…it’s a great way to load up on protein and veggies.


This was what I picked up at Whole Foods one day after a long work day. Meatloaf, green beans and mashed potatoes. Easy and yummy, but NOT cheap…thanks Whole Foods…


THIS. This will forever be one of my favorite meals that Jon makes. Mojo pork with black beans and rice. His black beans are perfection and I could literally eat them all day every day if I had to.




I attended Flicks and Food Trucks in downtown Tampa for a work event this past week. Definitely check it out if you haven’t yet. There’s 15 local food trucks that come out, live music and a big blow up screen where they show a movie. It’s super neat. While I was there I got the Che-Bacon from the Grilled Cheese truck. This thing was heaven. Pure, absolute, cheesy heaven.
