Is there anything better than homemade pancakes? Fact: I barely ever eat pancakes at a restaurant because Jon’s are my favorite.

My friend Ashley and I started off our 4th of July with brunch at Stella’s in Gulfport. This was their spanish omlet with chorizo. Not pictured: a killer spicy bacon bloody mary.

We had friends in town a few weeks ago for a wedding. We HAD to take them to our fav place for dim sum, Ha Long Bay.

That seem weekend we had other friends in town and we got lunch with them at Pom Pom’s, which I’ve raved about before. This was there Turkey with Ginger Cran Chutney on pumpernickel and their asian slaw on the side. Delish!

This was a salad creation by moi from leftover salmon cakes. Roasted corn, black beans, tomato, cucumbers and spinach. For the dressing I did a sriracha ranch.

Needed a quick dinner one night and stopped by to get sushi at Rollboto. Love this place!

Dinner at Three Birds Tavern for a Lightning game. We hadn’t been to this place in FOREVER and decided to give it a try. I got the Shishito Pepper Burger and subbed chicken breast for the burger. It was nothing too special, but pretty good all the same. Fries were great!

I made salmon cakes and we had them with leftover mashed sweet potatoes with kale and goat cheese.

Jon got fresh Grouper so he served it blackened with a baked potato and a yummy mixed vegetable creation.

Take out night! We wanted thai and discovered our fav thai place (The King and I) closed!! Apparently they sold the building (wonder what’s going in there??) So we took out from #9 Bankok down the street from them. Yellow curry with chicken and papaya salad.

My friend Lora and I went to happy hour at Copperfish in Tampa. I’ve been wanting to try this place for forever! They have the BEST happy hour specials…you all seriously need to check them out. Half off cocktails, wine and beer. And they have some of their house favorites at a seriously reduced rate. Pictured is their fantastic burger, grilled oysters and oaxaca shrimp.

Homemade Grouper tacos and rice and black beans! One of the best meals in the past few months. Jon used coconut flour on the Grouper and was an excellent touch!

Chinese Green Beans with Ground Turkey. One of the best meals I’ve made in awhile (if I do say so myself). This recipe was so easy and SO tasty. I’ll definitely be making it again!

Jon’s latest creation. Grouper with a coconut milk curry sauce complete with sweet potatoes, pineapple, mango and spinach. Served atop soba noodles. All made from stuff we had in our pantry/fridge/freezer!

When Jon made his homemade lasagna we stopped at Mazzaro’s for supplies. We got a gelato treat as a result! This was their strawberry balsamic flavor and it was glorious!

After a shopping trip at Trader Joe’s I just had to dig in to my finds. Their caramelized cheddar is seriously my fav cheese in the whole wide world.

My Favorite Places For Healthy On The Go Meals

One of the major changes I needed to adjust to with my new job was my eating schedule. I’m either at home or I’m out and about going to meetings, events, visiting with coworkers, etc. I’ll often find myself out around lunch time and the inevitable question presents itself…where should I go get lunch?

Thankfully, I’m highly turned off by fast food (i.e. MacDonald’s, Taco Bell, Burger King). Also, thankfully, I’ve found that there are many places where it is easy to stop in and grab a healthy meal.

Here are some of my favorite places to go and grab a quick, healthy meal. Convenient doesn’t have to be bad for you!

Panera

This one is probably the post obvious, but who doesn’t love Panera? With an array of soups, sandwiches and salads your taste buds can never get bored. I also love how they list their calories on their menu. I’m a big fan of the You Pick Two and my new fav combo is the Roasted Turkey Avocado Sandwich and the Strawberry Poppyseed Chicken Salad. I highly recommend getting their rewards card for freebies and discounts!

Little Greek

Even though this place is a chain it’s my favorite Greek place in St. Pete (there’s not a lot of options). I haven’t even had their gyro because every time I go I can’t help but get their Greek salad. Their grilled chicken is amazing! It has that grilled taste and really makes the salad.

Chipotle/Tijuana Flats

I’m a burrito bowl lover and both of these locations offer an awesome, fresh tasting burrito bowl (in Tijuana Flat’s case it’s the Noritto Bowl). Rice, beans, meat and salsa. Can’t go wrong with that.

Rollboto

This is a local eatery that serves up sushi at a fast pace. Think of Subway but with sushi. You can choose from one of their signature rolls or create your own. You can even substitute brown rice! They also have lots of healthy side options such as miso soup, seaweed salad and cucumber salad.

Publix/Whole Foods/Fresh Market/Rollin’ Oats

I love Publix for when I want a freshly made wrap. It’s also easy to grab healthy snacks like fruit bowls, veggies, etc. Whole Foods has an awesome (albeit costly) salad bar and I love that I can grab a pre made juice/smoothie. Fresh Market also has freshly made sandwiches, salads, sides and sushi already ready to grab and go. Rollin’ Oats is one of my favorite grocery stores in St. Pete. They also have a grab and go area with freshly made sandwiches and salads. Or you can order off their menu at their cafĂ©. I also love getting a fresh juice or smoothie here as well.

Beer with the Bard

Last night was St. Pete Shakes’ first Beer with the Bard event at The Ale and the Witch. We’re going to be doing this little friendraiser every 2nd Thursday of the month.

And the first one was a success! Ale and the Witch already has a lot of people who frequent their awesome bar, but we also had a lot of friends and supporters who came out for the event.

We had a small raffle, had free buttons and magnets out and had some of our awesome actors perform some monologues.

It was a great time hanging with friends, meeting some new faces and spreading the word of the Bard 🙂

Since we were there around dinner time I stopped into Rollboto for some sushi. This was my first time trying the “Subway of sushi” and wasn’t sure what to expect. It’s kind of cool. They have rolls that they make and you can customize them, or you can create your own, which is what I did.

Brown rice, 1 oz tuna, 1 oz salmon, avocado, sweet potato fries (!), cucumber and spicy aioli.

The sweet potato fries were actually good in this…you can’t really tell you’re eating fries in sushi, but you get the awesome flavor of sweet potato.

The sushi itself was a-ok. Nothing too special, but it hit the spot. And the fish tasted fresh, which is most important.

Later in the night, Farm to Forks Organics was selling small plates in the courtyard. They’re there every Thursday!

I tried some truffle mac and cheese.

I liked it, but the truffle flavor was almost overwhelming. I always thought I liked truffles, but it seemed too much in this? I also had a lot of garlic aftertaste, which I’m not a fan of. I don’t like my meal hangin’ around! But I would definitely try them again next time.

Throughout the night I sipped on Woodchuck Ginger, which was awesome. Light and refreshing with the perfect amount of ginger taste. I forgot how full cider makes me though. I got a 2nd one and could barely get through half of it.

If you’re local and haven’t been to the Ale and the Witch you must. It’s located in the Plaza Tower Courtyard and just has the coolest atmosphere. And the owner Brett, is one of the nicest people I’ve met and he knows how to run a good business. And he just genuinely loves his job and seeing people have a good time.

Can’t wait to do this event every month!

We’re off to Cape Coral this weekend!
